This section contains a list of all our slow-fermented, air-dried salami. Most of the salami we make is based on traditional Italian-style recipies that date back to our Roman ancestors who passed through Upper Brynamman on their way to the Carmarthen Ampitheatre. However, we also produce Spanish-style chorizo and our very own multi-award winning 'Pink Gin Salami' - something the Roman invaders could only dream of.
Search through our range of air-dried whole muscles. Our manufacturing process is very simple, we select the very finest quality pork cuts, roll them in salt, herbs and spices and carefully hang them up to air-dry for a minimum of 3-6 months (sometimes longer). Traditionally, these cuts of meat would have dried in the fresh Mountain air of an Italian charcutier. However, the climate in the UK is not suited to air-drying, so we decided to import our state-of-the-art climate controlled fermentation caves directly from Italy. They're great!
We carefully smoke our meats over 'real fires'. Sounds a little odd I know.... but believe it or not, the standard practice is to spray smoke-flavoured liquid on to the outside of meat. Sounds as it tastes - gross. If you like the genuine flavours of lightly smoked meats then this is a great place to start your search.
